White Hibiscus Iced Tea

Serves 4 · Prep 10 minutes + chilling

Ingredients

  • 4 heaping tbsp Saafara White Hibiscus (dried calyces)
  • 4 cups filtered water, just off the boil
  • 2–3 tbsp honey or agave syrup, to taste
  • Juice of 1 lime
  • Fresh mint leaves, for garnish
  • Ice cubes

Method

  1. Pour the hot water over the white hibiscus and steep for 8–10 minutes, until the liquid turns a soft golden hue.
  2. Strain out the calyces and stir the honey into the warm tea until fully dissolved.
  3. Let cool to room temperature, then refrigerate until fully chilled.
  4. Stir in the lime juice, pour over ice, and garnish with fresh mint.
Tip: for a rosier, tangier glass, blend in a teaspoon of Saafara Hibiscus Powder before serving.
