Description

White Hibiscus

Scientific Name: Hibiscus sabdariffa
Also Known As: White Bissap • Jamaica

White Hibiscus is a distinctive West African botanical made from the pale calyces of Hibiscus sabdariffa. Unlike the deep red variety, White Hibiscus brews into a light golden infusion with a pleasantly tart, citrus-like flavor and delicate fruity notes.

Traditionally enjoyed in Senegal and across West Africa, White Hibiscus is naturally caffeine-free and can be prepared hot or chilled over ice. Its clean, refreshing taste also pairs beautifully with mint, ginger, citrus, or your preferred sweetener.

White Hibiscus is especially versatile in the kitchen. The dried calyces can be cooked directly into savory dishes, including Djolof rice, where they contribute a bright, pleasantly sour note. Once softened through cooking, the whole calyces can be eaten as part of the dish.

It can also be used to bring natural tartness to sauces, marinades, rice dishes, syrups, and other culinary preparations. For sweeter applications, White Hibiscus can be incorporated into treats such as crispy rice snacks, desserts, fruit preparations, and syrups, adding a subtle tang that balances sweetness.

Brewing Method

Hot Tea: Add 1-2 tablespoons of White Hibiscus calyces to 8 oz of freshly boiled water. Steep for 5-10 minutes, then strain. Sweeten if desired.

Iced Tea: Brew slightly stronger, strain, allow to cool, and pour over ice. Add mint, citrus, or sweetener to taste.

For Cooking: Add the dried calyces directly to rice, sauces, or simmering dishes. Cook until softened. The cooked calyces may be eaten along with the finished dish.
