White Hibiscus Popsicles with Lime & Mint
By Mously Mbacke
A light golden infusion, a touch of citrus, and a refreshing way to enjoy white hibiscus.
Hibiscus does not always come in ruby red. White hibiscus brews into a delicate, pale golden infusion with a pleasantly tart character. Frozen into popsicles, it becomes a simple treat with a beautiful crystal-gold color.
This recipe brings together Saafara White Hibiscus, sugar, lime, and an optional touch of mint. Strain the infusion before freezing for a smooth popsicle without loose calyx pieces.
Makes: about 6 popsicles, depending on your molds
Prep: 15 minutes, plus cooling
Freeze: 6–8 hours or overnight
Ingredients
- 2 heaping tablespoons Saafara White Hibiscus, dried calyces
- 2 cups freshly boiled drinking water
- ¼ cup granulated sugar, adjusted to taste
- 1 tablespoon fresh lime juice, plus more to taste
- 4–6 fresh mint leaves, optional
Preparation
- Steep. Place the white hibiscus in a heatproof jug. Pour over the hot water and steep for 8–10 minutes. Add mint for the final 2–3 minutes if using.
- Strain. Pour through a fine-mesh strainer into a clean heatproof jug. Discard the calyces and mint leaves.
- Sweeten. Stir in the sugar while the infusion is warm until fully dissolved. Add the lime juice. Taste and adjust; freezing makes sweetness less noticeable.
- Cool. Let the infusion cool, then refrigerate until chilled. Keep the total time at room temperature under 2 hours.
- Fill. Pour into clean popsicle molds, leaving about ¼ inch of space at the top for expansion. Fit the lids and sticks according to your mold instructions.
- Freeze. Freeze upright for 6–8 hours or overnight until completely solid.
- Unmold. Briefly rinse the outside of the molds with warm water, then gently release. Enjoy immediately.

Saafara Kitchen Tip
Keep the first batch simple so the character of white hibiscus comes through. For a more pronounced flavor, use a little more hibiscus in your next batch. The final color can vary from pale champagne to a deeper gold with the strength of your infusion.
Make ahead
Once frozen, transfer the popsicles to a sealed freezer container or wrap individually. For the best texture and flavor, enjoy within one month.
Serve after lunch, share at a garden gathering, or keep a batch ready for a refreshing afternoon treat. For a drinkable version, enjoy the chilled infusion over ice instead.
