Smoked Turkey Mboum
A Saafara adaptation of Senegalese moringa-and-peanut sauce.
Smoked turkey gives this comforting mboum savory depth alongside tender moringa leaves, cabbage, and finely ground peanuts.
Serves: 4–6 · Prep: 25 minutes · Cook: about 60–75 minutes
Contains peanuts. Quantities and timings are a proposed home-kitchen adaptation.
Ingredients
- 700–900 g fully cooked, bone-in smoked turkey legs or wings
- 200 g fresh moringa leaves, tough stems removed, or 35–40 g dried moringa leaves
- 200 g finely ground, unsweetened peanuts
- 250 g cabbage, cut into bite-size pieces
- 1 large onion, finely chopped
- 3 garlic cloves, crushed
- 2 scallions, finely chopped
- 2 medium tomatoes, chopped
- 1 tablespoon tomato paste, optional
- 1 tablespoon neutral oil
- 1.2 litres water or unsalted stock, plus extra as needed
- 1 small whole chili, optional
- Black pepper and salt, to taste
To serve
400 g dry Senegalese millet couscous, or Moroccan-style couscous or white rice prepared in a quantity suitable for 4–6 servings.
Preparation
- Prepare the moringa. Wash fresh leaves, blanch in boiling water for about 2 minutes, and drain. For dried leaves, rinse in a fine sieve, soak in warm water for 15–20 minutes, and drain. Remove remaining tough stems.
- Build the base. Warm the oil in a large heavy pot. Cook the onion for 5 minutes. Add the garlic and scallions and stir for another minute.
- Add the tomatoes. Stir in the tomatoes and optional tomato paste. Cook for about 5 minutes.
- Simmer the turkey. Add the fully cooked smoked turkey and water or unsalted stock. Bring to a gentle simmer, cover, and cook for 20–30 minutes.
- Add greens and peanuts. Add the cabbage and moringa. Whisk ground peanuts with a little warm water into a smooth slurry and stir gradually into the pot.
- Cook gently. Add the optional whole chili. Simmer partially covered for 30–40 minutes, stirring regularly, until the greens are tender and the sauce thickens. Add water if needed.
- Finish. Remove the turkey, discard bones, cartilage, and tough skin, and return the meat to the pot. Heat thoroughly. Taste before adding salt, as smoked turkey can be salty.
- Serve. Spoon over your prepared couscous or rice.
Choose your accompaniment
Traditionally served with Senegalese millet couscous. Moroccan-style couscous or steamed white rice also work beautifully. Prepare your chosen accompaniment separately according to its package instructions, then spoon the mboum over it.
Saafara Kitchen Tip
This version gets its smoky flavor from turkey and does not require preserved fish. Keep the sauce loose enough to spoon generously over the grains.
