Expand your beverage menu with naturally caffeine-free Sehhaw and hibiscus herbal teas. Offer a warm alternative for customers who prefer to avoid caffeine, including those choosing something other than coffee after dinner. Help families choose by clearly listing each blend’s ingredients and suitable serving options; caffeine-free alone does not establish whether an herb is appropriate for a child.

Serve by the cup

Measure the leaves into a reusable basket infuser, add hot water and let the customer remove the infuser after brewing. Supply a small drip dish to keep the table clean. Staff can also brew and strain the tea before serving.

A teapot for two

For Sehhaw, start with 4 g of leaves and approximately 17 fl oz (500 ml) of hot water in a teapot with an infuser. Provide two cups so customers can pour for themselves. Two measured scoops may be convenient once your scoop is calibrated to 2 g each.

Choose your refill offer

Sell by the cup, offer a shared pot, or test an included refill with a meal. Set a clear refill policy and include fresh tea, staff time and service costs in your price. Adding more hot water to used leaves changes the strength.

Serve from a barrel-style drink dispenser

Prepare a measured 5-liter batch, then serve approximately twenty 250 ml drinks before adding ice. A clear dispenser with a tap displays the drink’s color and makes portioned service simple.

The first table shows a whole bag; this table shows one 5-liter batch, or 20 glasses. The ingredient quantity and cost per glass are the same in both tables. Smaller batch totals do not mean a lower return per serving. Amounts are rounded to the nearest cent. These are two views of the same economics, not additional sales. All twenty servings must sell to reach $80. Deduct all other costs before calculating profit. Dispenser capacity, ice volume, recipe strength and waste affect actual yield.

Start with a small batch

Red Hibiscus Mint: Start with 16 g per 1 liter of prepared tea. Brew, strain, sweeten to taste and chill. Taste-test the strength with the ice and garnish used for service.

Baobab: Start with 40 g per 1 liter of water. Whisk or blend, sweeten to taste and serve chilled. Stir before pouring, and adjust to your preferred texture.

Sehhaw: Start with 8 g per 1 liter of prepared tea. Brew, strain and chill. Offer plain or lightly sweetened, with optional citrus.

Measure the finished drink volume after straining and adjust your recipe before setting a menu price. Follow your kitchen’s food safety procedures for cooling, refrigeration and service.

Make it part of the meal

Offer a glass with lunch, serve a signature drink from a counter dispenser, or introduce a rotating Saafara drink special. Track portions sold, ingredient use and waste for your first week, then price from your own results.
